Pierogi!

Late dinner tonight…

I love Pierogi…and I really love Polish food! Anyone else like Polish food? I grew up in Connecticut…and the first time that I tried a Pierogi, I was about 14 years old and at my then girlfriend’s Grandmother’s house in New Britain…they were homemade and unbelievable! We had Galumpkies there too…and my Mom always had made those athome also…growing up her best friend as a child was Polish….and her mother taught my Mom how to make them. I have a huge fondness…and appetite…lol for Polish food!

These Pierogies I did not make from scratch..they are store bought…but delicious! I hope to try my hand at making some from scratch soon!If you have any family recipe’s please share along with your ideas and thoughts in the comment section below!

Thank You!

Love,

Joe

Happy Saint Joseph’s Day means… Zeppole!:)

Buona Festa di San Giuseppe! (Happy Saint Joseph’s Day!) Buon Onomastico a Me!:) What an awesome way to start off the week! My name day! Just got my first zeppole of the day!;) I love my family! Keep them coming! I can’t wait to eat and then have all the pastries and zeppole!:) When I was a kid and all through my years my family always made it a point to have an awesome feast and if that could not happen or I was away from home…I always received zeppole from them…

Zeppole..or sfinge as some people say are Italian pastries…a type of cream puff…or fried dough…there are many different types, styles and recipes depending on where in Italy you come from…they are all delicious and they are one of the traditions of St Joesph’s Day….

I am Italian..on both sides of my family…and Catholic…and Joseph(Giuseppe) is my name, my father’s name and also my grandfather’s name..we are all Giuseppe’s!:)lol So this little holiday..which is often overlooked here in the US  means a lot to me and always brings back great memories… I miss my Dad and Nonno very much…

Grilled Panini!

Everyone loves a sandwich….and to me, there’s nothing better than a grilled sandwich…

In Italian a sandwich is called a panino…plural…Panini…

Let’s see…what’s in it…a panino is whatever you want it to be. Whenever you make one there’s a part of you in it…and it’s always a little different depending on what I have around the house at the time.

This one I made is…Italian bread(a whole loaf cut lengthwise and slightly hollowed out), some lunchmeat…ham…cappicola, mortadella, turkey, some stuffed roasted red peppers I had left over, cheese, lettuce, olive oil, spices…salt, pepper, a pinch of oregano, pinch of garlic powder, a pinch of onion powder, fresh parsley…grilled up toasty brown in real butter and olive oil in a cast iron grill pan…with another one on top to squash it!:)

Mangia bene!!!

Love,

Joe

God I Love Soup!! http://goo.gl/fb/vQfLz

God I Love Soup!!

There’s nothing like homemade soup…I love it…it’s simple to make, good for you, certainly economical…yet can be elegant, rich and flavorful and soul warming…winter, summer…doesn’t matter.
Since I’ve been getting more and more food aware these days and reading the labels of some of my favorite quick go to canned soups we have all grown up eating…I noticed the extremely high sodium content…it’s unbelievable! So I’ve been on a kick lately of making my own instead. It’ so much healthier, easy to do and delicious!
If you’re having one of those days when you’re low on food in the house…and don’t have a clue on what to make for dinner…have a look around the kitchen, chances are you have the makings of an awesome, hearty soup!
I through this great soup together tonight. It’s a pureed cannellini bean soup…a little olive oil and garlic and a can of cannellini beans(white beans) into the food processor… then off to a big soup pan…a little water…or chicken broth…throw in some spinach, a few potatoes…sea salt to taste…a few sprinkles of peroncino(hot red pepper flakes) simmer ahile… Done!;)Squisito!!

Baccala Marechiara

Img00216-20110309-1800

Baccala Marechiara…

This a dish my Nonna used to always make and my Mother also.
It is a fish stew with cod, San Marzano peeled plum tomatoes, olive oil, garlic, large green olives, oregano, black pepper and salt…
Baccala is always associated with Christmas Eve…but I like it any time of year…and seeing as it is Ash Wednesday and I wanted to make some fish…I thought it would be a great night to make this awesome dish.
Marechiara means “sea light”…
When you see this name on a menu it usually means a light tomato sauce, in most cases paired with fish. I use green olives with the pits but you can use black olives and capers too if you like. When making it throughout the year…I use fresh cod instead of the traditional salted cod that I use on Christmas Eve…I find it a bit less “fishy” and it saves a lot of time also…
Enjoy!
Love,
Joe
